I received promotional consideration by DuClaw brewing Company for this post.
Opinions and Comments about the product are my own.
First brewed in 2002, Naked Fish is like most stouts in that it is medium bodied, and black in color with a light tan head. That is where the similarities stop and Naked Fish’s flavors combine to compose something truly unique. To produce the flavors that set this stout apart, gourmet chocolate raspberry coffee is added to the grain bill. Naked Fish incorporates the aroma and taste of roasted malt, raspberry and chocolate; the makings of a perfect Valentine’s Day beer for sipping, or even cooking and baking. With a smooth 4.6 ABV, and a dry, chocolaty finish, it’s perfect to pair with a romantic meal or toast to the single life. – DuClaw Brewery
I’m always excited to incorporate one of a kind ingredients in my cooking to see what flavors and ingredients pair well with each other. I jumped at the chance to work with Du Claw Brewery and feature their new product for Valentine’s Day: Naked Fish Chocolate Raspberry Stout .
I enjoyed drinking this beer to relax after a grueling day at work, I think every dark chocolate chocoholic will. There were several recipe ideas in my mind to feature Naked Fish Chocolate Raspberry Stout but the conversation below was my deciding factor:
“I’m rethinking making chicken wings with the Stout”
“Because it’s not romantic and it’s a Valentine’s beer”
“But what is more romantic than chicken wings?!?”
So there you have it. I am definitely ditching the wine and serving up DuClaw Brewing Company’s seasonal Chocolate Raspberry Stout, Naked Fish.
Crispy Chicken Wings in Naked Fish Chocolate Raspberry Stout Glaze
1 Tbsp Butter
roughly 1/4 cup brown sugar
1 cup Du Claw Naked Fish Chocolate Raspberry Stout
1 to 2 tsp hot sauce
1 to 2 tsp apple cider vinegar
Salt according to taste
Directions for Naked Fish Chocolate Raspberry Stout Glaze:
1. Melt butter in a sauce pan on medium to low heat
2. Add sugar, hot sauce, and vinegar and Naked Fish Chocolate Raspberry Stout
3. Mix and bring to a boil then immediately set heat to low
4. Simmer down until the spoon leaves a trail (2nd pic below), remember the glaze will thicken when it cools.
5. Add salt to taste
The Chocolate Raspberry Stout turned out to be a versatile and delicious base both for the glaze for the chicken wings and as a spread for Brie and crackers.
Mix frequently so sugar won’t burn
Adjust Sugar, Vinegar, Hot Sauce and Salt according to taste
The glaze should stick to the back of the spoon
Directions for Andy’s Crispy Chicken Wings:
Preheat oven to 500 degrees
*** reduce the oven temperature as directed as soon as the chicken wings are inside the oven!
1. Season chicken wings in oil, paprika, salt and pepper
2. Arrange chicken wings on a well greased wire rack placed over a greased baking pan
3. Place in oven and adjust heat down to 350 degrees
4. Bake for about one hour or until golden brown
5. Toss wings in Naked Fish Raspberry Stout Glaze
Grease baking pan and wire rack well for easy cleaning
Place one or two extra chicken wings that you can pull out to test for doneness
DUCLAW’S NAKED FISH BREW: A PERFECT PAIRING FOR VALENTINE’S DAY
— Seasonal Chocolate Raspberry Stout hits shelves for limited time —
Made with Goldings hops, and grains including pale, Caramunich and
chocolate malts plus roasted barley, Naked Fish was concepted by DuClaw
Brewmaster Jim Wagner while angling at a favorite fishing hole and
enjoying a hot cup of raspberry coffee. Inspiration struck, he went
straight home to his homebrew system and made the first batch using the
exact coffee he enjoyed that morning!
Naked Fish is currently available in 12 and 22 oz. bottles in stores
across Maryland, DC, Delaware, Virginia, New Jersey, Pennsylvania and
North Carolina. It’s also available on tap at DuClaw brewpubs and in other
select bars and eateries. For more information, please visit
I’ve had so much fun working with this product that I used it to make The Beerones’ Stout Truffles too!
