Buko Pie – Filipino Coconut Dessert Pie

This Buko Pie – Filipino Coconut Dessert Pie Recipe – requires two recipes, the coconut filling (scroll down for the recipe) and the pie crust.  You can find the butter pie crust recipe here.

Coconut for pie filling

Los Baños, Laguna.  The place to go to for hot springs and Buko Pie.  When the traffic in Manila was not the horrific mess it is now, my dad,  in his younger and healthier years, would pile all of us in the car and head toward the country’s hot springs capital.  It did not matter if the summer tropical heat was enough to melt our asses off the seat. We were going to get out of the city, enjoy the view of Mt. Makiling from the road, and be surrounded by nature.

On our way home, we would stop by at the The Original Buko Pie shop.  One of our family members will stand in the long line of other tourists wanting to buy the “best pie in town” while we all waited in the car.  The same shop also sold Kesong Puti, a soft white cheese made from Carabao’s Milk (Water Buffalo). We’d drive home to Manila with several boxes of Buko Pie for friends and family.  The kesong puti was just for us – it was so fresh with no preservatives and only lasted 1-2 days even with refrigeration. The pies were “pasalubong” for our friends and family – a Filipino custom of gift giving as souvenirs from home or from one’s travels.

What do you need to make Buko Pie – Filipino Coconut Pie Dessert?

One Double Pie Crust. If time is a concern, buy the ready made pie crust at the grocery store.

The Filling. The filling has the consistency of pancake batter. If you’re concerned that store bought pie crust might be too thin, pre bake the bottom crust.

  • 1/4 teaspoon salt
  • 1 cup flour
  • 1/2 cup plus
  • 2 tablespoons Sugar
  • 3/4 cup powdered milk
  • 2 eggs
  • 1 (16 oz) pack frozen shredded young coconut, thawed

For the Filling, Put all dry ingredients in a bowl and mix with a wire whisk. Add the eggs and coconut then mix until combined. All done!

Ingredients

  • 1 double Pie Crust (pre-made)
  • 1/4 teaspoon salt
  • 1 cup flour
  • 1/2 cup plus 2 tablespoons Sugar
  • 3/4 cup powdered milk
  • 2 eggs
  • 1 (16 oz) pack frozen shredded young coconut, thawed

Instructions

  • Put all dry ingredients in a bowl
  • Mix with a wire whisk to combine
  • Add eggs
  • Add coconut
  • Mix all ingredients until combined
  • Spoon ingredients into pie crust, spread evenly
  • Pour liquid in, do not overfill to prevent spilling
  • Cover pie with second pie crust
  • Crimp edges of pie, piece top of pie
  • Pierce top of pie with fork about 3-4 times before baking
  • Bake for 40 to 45 mins or per pie crust instructions
