Ingredients

  • 1 double Pie Crust (pre-made)
  • 1/4 teaspoon salt
  • 1 cup flour
  • 1/2 cup plus 2 tablespoons Sugar
  • 3/4 cup powdered milk
  • 2 eggs
  • 1 (16 oz) pack frozen shredded young coconut, thawed

Instructions

  • Put all dry ingredients in a bowl
  • Mix with a wire whisk to combine
  • Add eggs
  • Add coconut
  • Mix all ingredients until combined
  • Spoon ingredients into pie crust, spread evenly
  • Pour liquid in, do not overfill to prevent spilling
  • Cover pie with second pie crust
  • Crimp edges of pie, piece top of pie
  • Pierce top of pie with fork about 3-4 times before baking
  • Bake for 40 to 45 mins or per pie crust instructions
