Cast Iron Potato Carrot Frittata




  1. Pre-heat oven to 350 degrees F
  2. On stove top, Melt 1 tablespoon butter over medium heat on a 6 inch cast iron skillet
  3. Add onions and carrots and brown, remove from heat
  4. Arrange Potatoes evenly over onions and carrots
  5. In a bowl, mix Worcestershire sauce, milk, salt and pepper according to taste
  6. Add 4 eggs and beat until mixed in with milk mixture
  7. Pour over Potatoes and Carrots
  8. Press down with fork to moisten top layer of potatoes
  9. Add dollops of butter over potatoes
  10. Bake for 30-40 minutes or until fork tender
  11. Brush with butter before serving
