Chicken and Rice Noodle Soup

A simple and delicious rice noodle soup recipe that makes use of Pho Bouillon and Better than Bouillon Chicken as the soup base.


1/2 medium sized chopped Onion
2 pieces chicken thighs cut into bite size pieces
 1 box Pho soup bouillon
1 1/2 tbsp Better Than Bouillon
2 liters water (part of water used for soaking noodles)
Rice Noodles about 1/4 of med sized bag
3 cups Chopped Cabbage (pre-chopped coleslaw cabbage)
Salt and Pepper to taste
Garlic Chips (optional)


Soak rice noodles per package directions
Saute Onions on medium heat until tender
Add chicken and cook till brown
Add Pho bouillons and Better than Bouillon and mix until dissolved in pan
Add water and Rice Noodles, cover and bring to a boil then simmer for 10 minutes, keep pot covered.
Add Cabbage and simmer for another 5-10 minutes or until cabbage is tender
Ladle in Bowls and top with garlic chips


Chicken Stock can be used instead of bouillons/better than bouillon
