I’m always excited to incorporate one of a kind ingredients in my cooking to see what flavors and ingredients pair well with each other. I jumped at the chance to work with Du Claw Brewery and feature their new product for Valentine’s Day: Naked Fish Chocolate Raspberry Stout .
I enjoyed drinking this beer to relax after a grueling day at work, I think every dark chocolate chocoholic will. There were several recipe ideas in my mind to feature Naked Fish Chocolate Raspberry Stout but the conversation below was my deciding factor:
“I’m rethinking making chicken wings with the Stout”
“Why?”
“Because it’s not romantic and it’s a Valentine’s beer”
“But what is more romantic than chicken wings?!?”
So there you have it. I am definitely ditching the wine and serving up DuClaw Brewing Company’s seasonal Chocolate Raspberry Stout, Naked Fish.
Important Tips:
Mix frequently so sugar won’t burn
Adjust Sugar, Vinegar, Hot Sauce and Salt according to taste
The glaze should stick to the back of the spoon

The Chocolate Raspberry Stout turned out to be a versatile and delicious base both for the glaze for the chicken wings and as a spread for Brie and crackers.

Made with Goldings hops, and grains including pale, Caramunich and
chocolate malts plus roasted barley, Naked Fish was concepted by DuClaw
Brewmaster Jim Wagner while angling at a favorite fishing hole and
enjoying a hot cup of raspberry coffee. Inspiration struck, he went
straight home to his homebrew system and made the first batch using the
exact coffee he enjoyed that morning!
Naked Fish is currently available in 12 and 22 oz. bottles in stores
across Maryland, DC, Delaware, Virginia, New Jersey, Pennsylvania and

Chocolate Raspberry Glaze
Ingredients
Directions for Andy's Crispy Chicken Wings:
- oil to grease wire rack placed over a greased baking pan
- 2 lbs chicken wings
- 2 tsps salt
- 2 tsps pepper
- 2 tsps paprika
Chicken Wings in Naked Fish Chocolate Raspberry Stout Glaze
- 1 Tbsp Butter
- roughly 1/4 cup brown sugar
- 1 cup Du Claw Naked Fish Chocolate Raspberry Stout
- 1 to 2 tsp hot sauce
- 1 to 2 tsp apple cider vinegar
- Salt according to taste
Instructions
Directions for Andy's Crispy Chicken Wings:
- Grease baking pan and wire rack well
- Preheat oven to 500 degrees
- Season chicken wings in oil, paprika, salt and pepper
- Arrange chicken wings on a well greased wire rack placed over a greased baking pan
- Place in oven and adjust heat down to 350 degrees
- Bake for about one hour or until golden brown
Chicken Wings in Naked Fish Chocolate Raspberry Stout Glaze
- Melt butter in a sauce pan on medium to low heat
- Add sugar, hot sauce, and vinegar and Naked Fish Chocolate Raspberry Stout
- Mix and bring to a boil then immediately set heat to low
- Mix frequently so sugar won't burn
- Simmer down until the spoon leaves a trail (2nd pic below), remember the glaze will thicken when it cools.
- Adjust Sugar, Vinegar, Hot Sauce and Salt according to taste
- Add salt to taste
- The glaze should stick to the back of the spoon
- Toss chicken wings in Naked Fish Raspberry Stout Glaze
I’ve had so much fun working with this product that I used it to make The Beerones’ Stout Truffles too!
