Easy Healthy Brownies

This afternoon, I was getting ready to melt a stick of butter to make brownies and decided to check online for other alternatives.I was thrilled to find recipes that make these sinful treats guilt-free since I polished off the fudgy brownies I had baked last week (with some help from the bf) and had brownies again last Sunday while watching Game of Thrones.
I do need that kind of gratification knowing that George Martin kills off characters when you least expect it. It’s also a good excuse for brownies even if I’ve read the books and know what’s about to happen 😉
Here’s my take on Easy Healthy Brownies, modified from the “No Pudge Brownie Clone Recipe“
The recipe calls for 1 cup sugar and 2 egg whites but instead I used 1/2 cup of honey 1/2 cup of sugar and one egg instead of two egg whites.
Ingredients
1/2 cup sugar
2 tsps cornstarch
1/4 tsp baking soda
1/2 cup cocoa
3/4 cup flour
1/4 tsp salt
1 egg
2/3 cup low fat plain yogurt
1/2 cup honey
 butter/olive oil to grease pan

 
Directions
Preheat oven to 350 degrees
Mix all dry ingredients
Add yogurt, egg, and honey
Fold/Mix well
Grease 8×8 baking dish lightly
Evenly Spread batter in baking dish
Bake for 30 to 35 minutes

A sliver to taste turned into “just one more”… lol.
The brownies turned out delicious! The texture is cake like and springy but it’s super moist. This “healthy brownie” recipe is a good alternative for those avoiding butter.
