Mashed Potato Pancakes

Weekend brunch and  leftovers.

What’s not to love about days when life slows down a few hours a week to cook, create, and sit down to a hearty meal? And what’s not to love about Potato Pancakes with Feta and Capers specially when served with Sausages and Steamed Vegetables?

Ingredients:
Cooking Oil (for onions and pancakes)
1/4 medium sliced onions sliced thinly
2 cups mashed potatoes
2 eggs
1/4 cup flour
1/4 tsp baking powder
1/2 cup milk
1/4 cup feta cheese crumble
3 tbsp capers

Directions:

  1. On medium heat, Sauté onions in oil until tender, set aside
  2. In a bowl, mix the rest of the ingredients well
  3. On medium low heat, add 1/4 cup batter to frying pan, cook each side for 2-3 minutes each

potatopancake2-2Onions, Feta, Capers, Egg, Flour, Mashed Potatoes

potatopancake2-3 Side: Blanch Vegetables in boiling water for 3 minutes
and toss in garlic and olive oil

    YUM! I love feta and my husband loves potatoes so I feel like this recipe would be perfect for us!
