Instructions

For Purple Yam Cupcakes

  1. Pre-heat oven to 350 degrees
  2. Sift Cake mix in large bowl
  3. Add purple yam and eggs
  4. Mix well with a spatula
  5. Pour Purple Yam Cupcake Batter into lined muffin tins.
  6. Bake for 23- 25 minutes or until done
  7. Cake is done when toothpick in center comes out clean
  8. Cool in pan or wire rack
  9. Wait for cupcakes to cool before icing

For Coconut Cream Icing

  1. Whip Coconut Cream Icing in a mixing bowl
  2. Add Confectioner’s sugar by sifting the sugar in the bowl
  3. Mix well and chill in refrigerator for at least 1 hour
  4. Whip again for a few seconds (optional) before topping cupcakes
