Roast Chicken with Lemongrass




Basting Sauce


  1. Rub Salt and pepper on the chicken
  2. Put ingredients of marinade in a deep pan, mix well
  3. Marinate split chicken for at least 4 hours
  4. Pre heat oven to 350 degrees
  5. Place chicken on greased roasting pan with rack, skin side up
  6. Cover with foil and cook in oven for 1 hour
  7. Carefully remove from oven and remove foil
  8. Brush Chicken with Basting Sauce and drippings from pan
  9. Broil on low for 5 minutes, then broil on high for 3 to 4 minutes
