Instructions

For Roasted Garlic

  1. Preheat oven to 400 degrees F
  2. Lightly grease a small baking dish
  3. Coat cut garlic bulbs generously with oil and place on a baking dish, cut side up
  4. Sprinkle with salt and pepper lightly
  5. Cover dish with aluminum foil and bake for 40 minutes
  6. Set side to cool

For Adobo Baby Potatoes

  1. Wash potatoes thoroughly and pat dry
  2. Heat oil in a frying pan or skillet on medium-low heat
  3. Add soy sauce, apple cider vinegar, pepper, and bay leaves and mix well
  4. Add Baby Potatoes and mix until potatoes are coated with Adobo sauce
  5. Cover and cook for about 45 minutes, mix occasionally
  6. Potatoes are done when fork tender
  7. Set aside to cool

For Roasted Garlic Adobo Baby Potatoes

  1. Preheat Oven to 350 degrees
  2. Mix potatoes to coat each potato with Adobo sauce
  3. Line Adobo Potatoes on a greased baking sheet
  4. Gently smash potato halfway down with a fork
  5. Top with 1-2 roasted garlic cloves
  6. Gently smash roasted garlic clove and potatoes until flat
  7. Drizzle with remaining Adobo sauce
  8. Bake for 10 minutes
  9. Garnish with green onions (optional)
