Ube Pancakes

Ube Pancake is an easy recipe to make for breakfast, lunch, merienda (snack), or even dessert. The ingredients for deep Ube flavor is ube extract and ube jam (optional). You can use purple yam if you can’t find any jam. Just boil, mash the yams and mix in some sugar according to your taste.

Create your own Ube Pancakes!

The recipe I am sharing today is basic and easy! The add-ons make the pancakes extra special but are also optional. You can create your own delicious stack with different toppings. These Ube Pancakes have a lot of Filipino Food flavors topped with shredded coconut, grated cheese, and coconut jam. I also had some chopped walnuts and dates on hand and thought, why not?

Here are some add-ons or toppings

  • coconut jam
  • chopped nuts and dates
  • grated cheese
  • shredded coconut
  • butter and maple syrup

Why are the pancake toppings so different?

Ube is the Philippines’ favorite dessert flavor and is usually paired with coconut and cheese. I used regular grated cheddar cheese for the Ube Pancake toppings since the other add- ons, like the coconut jam, has a sweet flavor.

What is Coconut Jam?

Coconut Jam is cooked down coconut cream and sugar. I think this wonderful ingredient is under estimated! It’s a bit tacky in cooler weather or right out of the fridge but softens once transferred to a heat safe bowl and microwaved for a few seconds. It’s perfect for drizzling over Ube Pancakes.

Tips to make Ube Pancakes

  • use a measuring cup or scoop to make an even pancakes
  • ube jam is optional
  • you can also use boiled-mashed-sweetened purple yam/ube
  • you can use any kind of pancake mix
  • when edges of pancakes start to get firm, flip over
  • once other side is bouncy (press down with spatula) pancake is cooked

Ube Pancakes

Ingredients

  • 1 cup pancake mix
  • 1/2 cup milk
  • 1 large egg
  • 1/8 cup Ube Jam
  • 1/4 teaspoon Ube flavoring

Instructions

  • put pancake mix in bowl
  • make a well/hollow in the middle
  • add all ingredients in the middle
  • mix from center slowly
  • keep mixing until combined
  • butter/grease a hot skillet (medium/medium low)
  • pour 1/4 cup batter per pancake 
  • flip when edges are firm
  • cook other side for about 1 min 
  • stack ube pancakes
  • top with coconut flakes, walnuts, etc.
  • drizzle with coconut jam

Notes

  • no ube flavoring? use 1/2 cup Ube Jam
  • no ube jam? use 1/2 teaspoon to 1 teaspoon Ube Flavoring
  • use a measuring cup or scoop to make an even stack
