Ingredients

  • 1 1/2 teaspoon oil
  • 6-8 skinless chicken thighs
  • 3 medium bay leaves
  • 8 large smashed garlic cloves
  • 1/4 cup vinegar
  • 1/2 cup soy sauce
  • 3/4 teaspoon pepper

Instructions

  • Add oil to a large saut√© pan or skillet
  • Line pan with chicken
  • Add all ingredients
  • Bring to a boil then lower to a gentle simmer
  • Cover and cook for 15 minutes
  • Turn or move chicken pieces carefully around pan with tongs
  • Cover and simmer for 20 minutes
  • Turn or move chicken pieces carefully around pan with tongs
  • Continue cooking, slightly uncovered for 15-20 minutes or until chicken is cooked
  • To reduce sauce, uncover and increase heat to medium low
  • Bring to gentle boil/fast simmer for 10 minutes to reduce sauce to desired amount/consistency
  • Serve over rice or with a side of steamed vegetables
